Smashed Beef Tacos

This unique taste of Cheesy Beef Smash Tacos, where sizzling beef patties, seasoned and cooked until golden with a hint of char, find their home in warm tortillas and are layered with melt-in-your-mouth cheese. Topped with fresh avocado and crisp cabbage for a contrast of textures and a homemade pickled onion for a tangy kick, these tacos strike a perfect balance.

Ingredients

  • 12 oz lean ground beef
  • 2 tsp olive oil
  • 1/2 cup of chedder cheese
  • 8 small corn tortillas
  • 1/2 an avocado
  • 1-1/2 cups red cabbage finely shredded

Onion Pickle

  • 1 red onion thinly sliced
  • 1/2 cup red wine vinegar
  • 1 tsp salt
  • 1 tsp black pepper

Directions

  1. To make the Onion Pickle mix onion, vinegar, salt, pepper in a jar. Add hot water, shake well and set aside.
  2. Heat a skillet or grill over high heat.
  3. Season beef with salt, divide into balls equal to the number of tortillas.
  4. Add oil to skillet, place beef balls and flatten into thin patties. Season again.
  5. Cook until brown, flip, add cheese and cover each with a tortilla. Cook until beef is browned and cheese melted.
  6. Turn off heat, let rest, then remove from skillet onto plates.
  7. Top with avocado, cabbage, and drained onion pickle. Season to taste and serve.
