This is a Pumpkin Spice Latte recipe featuring unsweetened coconut milk, pumpkin puree, instant coffee, maple syrup, vanilla extract, and pumpkin pie spice. You heat the milk and puree, then whisk in the remaining ingredients, and serve in a mug dusted with extra spice. The result is a homemade, comforting fall beverage.

Ingredients

  • 3/4 cup (6 1/2 fl oz) coconut milk, unsweetened (carton)
  • 1/4 cup (2 oz) canned pumpkin puree (unsweetened) or 1 3/4 oz pumpkin, steamed & mashed
  • 1 tsp instant coffee
  • 1 tsp maple syrup (honey or rice malt syrup)
  • 1/2 tsp vanilla extract
  • 1/4 tsp pumpkin pie spice plus extra to dust

Directions

  1. Place milk and pumpkin puree in a small saucepan over medium heat. Heat until just hot, but don’t let it come to a boil.
  2. Remove saucepan from heat and whisk in remaining ingredients.
  3. Pour into a mug and dust with extra spice to serve.
