Smashed Beef Tacos

This unique taste of Cheesy Beef Smash Tacos, where sizzling beef patties, seasoned and cooked until golden with a hint of char, find their home in warm tortillas and are layered with melt-in-your-mouth cheese. Topped with fresh avocado and crisp cabbage for a contrast of textures and a homemade pickled onion for a tangy kick, these tacos strike a perfect balance.
Ingredients
- 12 oz lean ground beef
- 2 tsp olive oil
- 1/2 cup of chedder cheese
- 8 small corn tortillas
- 1/2 an avocado
- 1-1/2 cups red cabbage finely shredded
Onion Pickle
- 1 red onion thinly sliced
- 1/2 cup red wine vinegar
- 1 tsp salt
- 1 tsp black pepper
Directions
- To make the Onion Pickle mix onion, vinegar, salt, pepper in a jar. Add hot water, shake well and set aside.
- Heat a skillet or grill over high heat.
- Season beef with salt, divide into balls equal to the number of tortillas.
- Add oil to skillet, place beef balls and flatten into thin patties. Season again.
- Cook until brown, flip, add cheese and cover each with a tortilla. Cook until beef is browned and cheese melted.
- Turn off heat, let rest, then remove from skillet onto plates.
- Top with avocado, cabbage, and drained onion pickle. Season to taste and serve.
